Harvest with optimal phenolic maturity, light pressing without destemming and in the absence of oxygen, so as not to oxidize aromas, fermentation in French oak barrels at low temperatures and subsequent aging on fine lees for nine months in French oak barrels where they are stirred lees three times a week to give the wine a fuller mouthfeel.
